Instant Pot Love

Instant Pot Love

This past year I jumped on the Instant Pot craze and purchased one. Let me tell you, it was the best investment to date that I made. This little (well ok it’s not really little but you know what I mean) gem has been a huge time saver on more than one occasion. We have used this kitchen gadget at least once a week since we purchased it! Here are a few things that we have made in the Instant Pot:

  • Sweet Corn
  • Baked Potatoes
  • Rice
  • Chicken (an entire chicken!)
  • Beef Roasts

As a family of four and with both of us adults working, taking time to make a meal can be daunting. All the prep work, standing over the stove cooking/creating dinner and by the time you are done you have a kitchen mess (if you are like us) on top of additional dirty dishes and two littles that you now need to clean up, and PLAY with (because the requests for that happens every night in our house 🙂 ). AND unless you are blessed with a magical self-cleaning kitchen, when all is said and done you have to find enough energy to clean up that area before the day is done. All of this after you just spent a day at work!

The Instant Pot can be your own little chef if you think about it! Prep your items Sunday for the week for all your meals – put them in large bags labeled so you know what it is and you can without a doubt grab, dump, set and have dinner done literally in a blink! Just think an entire chicken done in less than 15 minutes!!! My husband had doubts and yes folks it was done perfectly in less than 15 minutes!

This week with it being extra crazy prepping for the Thanksgiving Holiday, we had made pulled pork lettuce wraps and they were fantastic!! Here is the link to that recipe from hip pressure cooking: Pulled Pork Lettuce Wrap Recipe.

Our family of four uses the 8qt, as our littles grow I think this will be a perfect size, right now we really can get away with meals made for 3 seeing that our toddlers eat – well – like toddlers :). All of the recipes that we have made so far have been found online. I have two cookbooks on my wishlist that I have seen at Target, they are:  Ultimate Vegan Cookbook for Your Instant Pot, Quick & Easy Recipes for Everyday Eating.

Click on the links below-they will bring you to the fantastic Instant Pot! AND don’t forget! Black Friday being today I am sure you can find some GREAT deals out there! Add the Instant Pot to your list!
